The crisps – made from potatoes grown in the Galician hills – are thinly sliced then slowly cooked in cold pressed olive oil and finished with a light sprinkling of salt

Each variety is then pressed back to stainless & left to rest on gross lees over the winter (also in stainless) before gravity racking

and the care that Jean-Louis took to “carry the weight of Hermitage on his shoulders
