Hand picked at the start of October and milled within 12 hours, its cold extracted and filtered to preserve an intensely fruity character and light green hue. Tasting: herbaceous aromas of green apple, rhubarb leaf, and tomato; the palate reprises those notes with a clean, spicy green olive finish. This oil is ideal used raw
